Mr. Merritt’s credibility was called into question briefly last spring when Mr. Butch Murphy of Key West, Florida, looked offshore from the Singleton Shrimp docks and saw a pelican scooping up fish after fish only to have the fish fall out of its pouch back into the water again.

The salmon, often called the king of gamefish, deserves to be properly prepared for the table. A kingly way to serve salmon is in a Court Bouillon. Here’s how it’s done. Into a deep pan put the following ingredients: 3 qt. of water, 1 qt. of white wine, 1 cup of wine vinegar, 3 peeled whole onions (into each of which 3 cloves have been stuck), 4 finely cut carrots, 2 celery stalks cut into 1-in. lengths, 1 bay leaf, 1 tsp. thyme, 4 or 5 sprigs of parsley, and 1 tbsp. salt.
