IN his comprehensive article on hams on page 43 of this issue, Joseph Wechsberg makes the valid point that there is really no need to buy imported hams in this country, since nothing could be finer than a fine Kentucky or Virginia ham. Coming from a feinschmecker like Joe Wechsberg, that European whose articles on gastronomy have usually vaunted the glories of the Continental cuisine both in this and other American magazines, this may seem surprising and unexpected praise of one of the high points of American cookery.
